Gluten Free Christmas Crack Candy

Important information for the Christmas Crack. For this recipe you will make your own toffee! It's easy to do, but MUCH easier with the proper tools. I recommend getting a candy thermometer.


This recipe has been adjusted to have taste and texture profile that is the same as its glutenous inspiration

Ingredients

Crackers

  • 1.5 cups gluten free 1:1 Flour Blend

  • 3/4 tsp baking soda

  • 1/4 cup and 2 tbsp shortening cut into cubes

  • 3 tbsp milk (almond milk works too)

  • 1/2 cup water

  • 1 cup unsalted butter

  • 1 cup brown sugar well packed

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon salt

  • 1 1/2 cups chocolate chips - pick your favorite ( I like Semi-Sweet )


Note: gluten free flour is cheap if you know where to look. I recommend getting Walmarts Great Value 1:1 blend or buying it from Costco


Instructions

Crackers

  1. Pre-heat oven to 375 degrees F

  2. Whisk together flour and baking soda and add the dry mix to a blender or food processor

  3. Measure and cut shortening into dime sized pieces and add it in with the dry mix

  4. Pulse until the mixture looks like wet sand and holds together when pinched between two fingers

  5. Add in water and milk and pulse a few times until dough starts to become smooth.

  6. Lightly flour a sheet of parchment paper (or a nonstick pan if you're skipping the parchment) and place the dough on it. Sprinkle a little flour over the top of the dough and spread it out until it's about the size of a book.

  7. At this point, either use a floured rolling pin or lightly flour the top, cover it with a second sheet of parchment paper, and flatten it with your hands. Continue flattening until the dough is about as thin as a coin. (If you use a second sheet of parchment paper and it sticks when you remove it, gently slide a butter knife underneath to help separate it from the dough.)

  8. Place onto the middle rack of the oven for 7 to 10 minutes rotating the pan every 5 minutes until the crackers are a light golden brown. See the attached video and photos for what it should look like when finished

  9. Place onto a wire rack to cool


Toffee

  1. prepare a pan by lining it with parchment paper and placing the crackers on top in a single layer

  2. In a small sauce pan add a melted butter and brown sugar. Turn the stovetop onto medium high until the edges of mixture begins to bubble. then add the salt and vanilla

  3. Continue to boil until toffee is cooked

    • If using a Candy Thermometer let mixture cook until mixture is at soft crack stage (275 degrees)

    • If not using one cook for about three minutes from the time the entire mixture began boiling . For consistency you can use the cold water test: drop about half a teaspoon of the toffee into very cold water. When cooled if the mixture is pliable and forms strings when formed it is done

  4. When the mixture is cooked pour evenly over the prepared crackers spreading with a spatula as needed. DO NOT TOUCH WITH YOUR HANDS THIS IS HOT AND STICKY.

  5. Place into preheated oven for 3 minutes. When ready to pull out the tofee should be bubbling over the crackers. When cooked place on a wire rack

  6. As soon as the mixture stops bubbling pour chocolate chips over the top. As the chocolate melts spread evenly with a spatula

  7. If you want you can add toppings while its still melty. I like to use sprinkles, M&Ms or Gluten Free Oreo Crumbs
